With winter in full swing, comforting fare like cucina povera (“peasant cooking” in Italian) is just what the doctor ordered. Invented out of necessity after World War I, this no-waste cooking style can now be enjoyed at the recently opened Associazione Chianti in Wan Chai, the latest offering from Black Sheep Restaurants. The Italian trattoria takes diners on a journey through Tuscany with simple yet satisfying dishes, such as bistecca alla Fiorentina seasoned with an aromatic Chianti-infused dry rub; chicken pan-fried in brown butter; and country bread with roasted pecorino and anchovies. There’s also an extensive list of wines from the region.
