A new chapter has begun at the famed Tsim Sha Tsui building that was first the site of the Marine Police Headquarters, then heritage hotel Hullett House. Enter House 1881. Amid the grandeur of the shuttered doors, courtyards and lawns are five revamped restaurants – Fortune Villa, Stable Steak House, Stable Bar, Café Parlour and The Sergeant’s Bar – each of which reflects a different aspect of the city’s history. Fortune Villa, for instance, channels Hong Kong’s fishing villages with local ingredients such as dried seafood, handmade beancurd, pickled vegetables and shrimp paste. After dinner, trot over to Stable Bar for cocktails like the Teaspresso, the bar’s take on an espresso martini.
